Award-winning author Colman Andrews will discuss his most recent book, Ferran: The Inside Story of El Bulli and the Man Who Reinvented Food. In this biography, Andrews offers a history of both Adria—whom he has known since 1998—and elBulli, as the chef turned a small resort restaurant in Spain into the world’s most acclaimed dining destination. As part of his presentation, Andrews will explain how Adria, who used to rely solely on experiments to develop new dishes, adopted a more scientific process. He will also talk about Adria’s relation to classic Catalan cooking and discuss how and why Adria is so much more than “the guy with foams.”
Colman Andrews was the co-founder and a former editor in chief of Saveur. He is the author of four cookbooks, including Catalan Cuisine, and most recently of The Country Cooking of Ireland, which was the 2010 James Beard Awards’ Cookbook of the Year.
